VARIATIONS ON THE THEME

After I made the ‘propper’ orange marmalade I decided to try a different recipe. Of course it was again in my favourite book but this time I used three different kinds of citrus fruit – grapefruit, sweet orange and lemon.

I always thought that Seville oranges are the best for marmalade making – that’s true but a different fruit mix gives a unique flavour, well worth the effort.
